‘Aoyama Bouchon Amuser’, a new concept of store where you can relax and enjoy the great pairing of food and wine.
“Bouchon.” In France it’s known for having the meaning of ‘cork’, or ‘straw’.
But in fact, it originated from the stopping of horses just outside the store.
These horses, who were carrying people, have just stopped for a rest.
It came to mean the ‘local atmosphere’, or ‘bar atmosphere’, of the stores in Lyon, France.
The meaning of ‘Aoyama Bouchon Amuser’ is literally the great atmosphere and style that surrounds these kinds of restaurants that anybody can easily enter.
The person who is running ‘Bouchon’ is Chef Yoshiaki Shindo,
who, after only one year in the kitchen, turned ‘gentil H’, an affiliated French restaurant in Shirokanedai, into a Michelin rated restaurant!
Standing beside him in the kitchen is Chef Takao Maeda. The cuisine expresses their unique spirits.
The executive sommelier is none other than popular wine school teacher and winner of lots of wine competitions – Mr. Koichi Tanabe.
Working together, they produced a great pairing of original cuisine and wine at an affordable price.
The main dish paired with great wine allows you to experience the concept of ‘Bouchon’.
